French Onion Soup (not from a can!)

So, yesterday, I decided I would go over to the local Tim Horton's to eat a certain soup everyone has been raving about - their "famous" French Onion Soup! It tasted a little can-like, with a few croutons on top, and I am pretty sure, but not certain that the Swiss cheese was processed! So, for all of you French Onion Soup lovers, such as myself, here is a very simple recipe you can make yourself. Take it to work with you - just take the soup in a microwavable container, and add the croutons and cheese just before heating up - yum!!! Anyone who tries it - please let me know what you think!

INGREDIENTS:
  • 3 tbsp butter
  • 3 tbsp oil
  • 5 x large onions, peeled and sliced thinly
  • Splash of water
  • Salt
  • 1/2 cup white
  • 1 tsp dried thyme
  • 6 cup either home made, or organic Beef Broth (you may use chicken if preferred)
  • Salt and pepper
  • 4 slices slices multi-grain bread, cut into cubes and toasted in the oven until browned.
  • 2 cup Swiss cheese, grated

METHOD

-In a soup pot, melt the butter with the oil.
-Once the oil is melted, add the onions, salt and the splash of water.
-Let the onions caramelize - 15-20 minutes or so.
-Once the onions are brown and caramel colour, "deglaze" the pan with the wine, and scrape bottom of pan with a wooden spoon.
-Add the thyme, the broth, salt and pepper to taste. Let this simmer for about 20 minutes so all the flavours combine.
-Ladle the soup into 4 over proof soup dishes.
-Top with the croutons, and then, the cheese.
-Broil on high for 2-4 minutes, or until the cheese begins to bubble
-ENJOY YOU SOUP!!!!
